Tuesday's Dinner Menu!

Hello All.  Today was a good day for me and quite a productive day!  I hope it was the same for all of you!  I got to see baby Easton for the first time, finally pick up the Tastefully Simple stuff from Cristal, got some cleaning done, picked up boneless pork ribs for my cooking day Saturday, and a few other odd and end things.  So here is Tuesday's Menu:
  • Sauteed Squash, Zucchini and Onions
  • Fried Apples
  • Sauteed Pork Chops (They were suppose to be grilled but it was too dang cold)
  • Brownies with Cool Whip and Strawberries


Sauteed Squash, Zucchini and Onions


Ingredients:
  • 4-6 Straight Neck Yellow Squash
  • 4-6 Zucchini (optional)
  • 1 Small Onion
  • 3-4 TBSP Butter
  • Salt and Pepper
Rinse vegetables thoroughly under warm water.  Slice the squash and zucchini so that you make perfect little circles.  Slice the onion to that you have slices about the size of pieces of a blummin onion.    Once you have sliced all veggies, melt 2-3 TBSP of butter in a large skillet.  Once butter is melted add vegetables.  Stir frequently.  NOT CONSTANTLY, JUST FREQUENTLY.  You may have to add some more butter as the vegetables start to soak the butter up.  Your vegetables should be translucent when they are done.  I prefer mine to even be a tad bit burnt!

Fried Apples

Ingredients:

  • 1 3 pound bag of apples ( I use organic Fuji, they are sweeter so you don't have to add so much sugar)
  • 2 Tbsp of Butter
  • Water
  • Cinnamon
  • 1/2 Cup of Brown Sugar
  • 1/2 Cup of White Sugar ( I use organic so I don't have to use as much)
 Rinse apples thoroughly in warm water.  Peel, core and slice.  If you have a corer/slicer tool that works perfect.  Place apple slices in large skillet, cover apples with water and add 2 TBSP butter.  Watch them closely because if the water evaporates and you aren't paying attention, you can easily burn the apples.  Cook until they are translucent and soft.  Add about 1/2 cup of water, Cinnamon, I didn't put a measurement on the cinnamon because you can add as much as you would like, I use 2 TBSP, and Sugars.  Stir well and place a lid on the skillet.  Stir occasionally.  Cook for 10-15.  Apples will be dark when done.


Sauteed Pork Chops

Ingredients:

  • 4 Boneless Pork Chops
  • Garlic Powder
  • Onion Powder
  • Salt
  • Pepper
  • Olive oil
Heat oil in medium size skillet.  Season pork chops with all four seasonings, place the seasoned side face down in the skillet and with the unseasoned side up, season it.  Cook pork chops until they are 165 degrees.


Brownies with Cool Whip and Strawberries

Ingredients:

  • 1 box of fudge brownies
  • 1/4 cup of water
  • 1/2 cup of vegetable oil
  • 2 large eggs
  • 1 container of Cool Whip
  • 2 cups of sliced strawberries
Prepare brownies according to the directions on the box.  Preheat oven to 350 degrees.  Follow baking directions on box.  Once brownies are baked, allow them to cool completely.  Once they are cool, spread whipped topping evenly over brownies and cover with sliced strawberries.
